China Southern has dropped the price of their flights from Toronto to Shanghai, Xi An, Hangzhou, Nanjing, and 8 other destinations in China down to $480 CAD roundtrip including taxes.
The flights all have 1 stop each way, in Guangzhou, China.
Shanghai is actually the one destination that is not as strong a deal as the others, because you can pretty much always find non-stop flights from Toronto to Shanghai in the high $600s or low $700s roundtrip these days.
But to the other destinations in China, you would always have at least 1 stop anyways, and the prices are always quite a bit higher.
China Southern is actually a pretty good airline (4 star Skytrax rating). I often see people confuse China Southern with China Eastern, a lower quality airline.

Xi An (XIY) - Undisputed root of Chinese civilization, home of the Terracotta Warriors, many historical ruins, Huashan mountain.
Wenzhou (WNZ)
Hangzhou (HGH) - Great city for tourists: West Lake scenic area, temples, pagodas, hikes, Huangshan yellow mountain, not far from Shanghai
Nanjing (NKG) - Many historical sites, tombs
Fuzhou (FOC)
Xiamen (XMN)
Zhengzhou (CGO) - Shaolin Temple / Monastery (90 min west), Yellow River scenic area.
Changchun (CGQ)
Shenyang (SHE)
Dalian (DLC)
Qingdao (TAO) - Sometimes referred to as the most beautiful and clean city in China. Near Laoshan, a scenic mountainous area.
NOTE: You can also fly into one city, but home from another, and keep the price about the same.

Great prices! On the other hand, all I want to go is Guangzhou.
There have been multiple Canadians arrested across China over the past few months. Please check the travel warnings from the government regarding China. I reduced time in a future trip to China due to the current circumstances.
Unless you're a high profile politician or executive, the odds of being arrested in China are lower than being hit by lightning in front of your house.
We all make risk-reward decisions multiple times per day. We drive because the reward of getting to our destination quickly is worth the risk of driving.
Don't let irrational fears stop you from living your life.
Jane - you are very naive. There have been many arrests other than high profile ones - https://globalnews.ca/news/4812963/13-canadians-detained-china-huawei/ - research places as best you can before you go. Don't base decisions on our laws, each country handles things differently! A year ago, I would have no problems travelling in China - nowadays it is different.

I think the point Jane is making is that today you would still have a 99.8888% chance of having no problems, as opposed to the 99.9999% chance of having no problems a year ago.
Has the statistical probability of you being detained in China increased in the past year? Perhaps. But by an infinitesimal amount.
